If you live in the Southern hemisphere it’s officially SALAD SEASON!!! Well, when is it not salad season tbh? But…yesterday was 38 degrees and one can only really eat salad in those temperatures! Today I’m sharing with you a gorgeous salad of peaches and radicchio with an incredible anchovy and tarragon dressing. A salad which has been on HIGH rotation ever since the first peach was spotted in the greengrocers a month or so ago!
And today, it’s pouring with rain, so a cherry and ricotta crostata too! Very much inspired by the ones in Rome, either shiny and burnished (think Boccione in the Jewish Quarter) or dusted heavily with icing sugar (like at Piatto Romano in Testaccio). I accidentally left a slice in my hotel fridge on my last trip to Rome and I still think about it.
The delicate pastry is rolled out and draped into a tart tin. Topped with homemade cherry jam (use store-bought if you want to, of course) and lemon zest-spiked ricotta mixture. Finished off with another layer of pastry and baked until golden and puffy. Such a treat! Some cracks are totally fine!
