As promised, this week, for my paid subscriber community, I’m sharing a recipe for a really delicious Timballo! An incredibly flavour-filled pasta bake found all over Sicily!
In popular culture, the pasta-draped Timpano from the film The Big Night gave it icon status and likewise in the epic novel Il Gattopardo by Giuseppe Tomasi di Lampedusa
As a Maltese-Australian, I grew up eating, Timpana, a similar dish but made with pastry instead or pasta, but any kind of baked pasta is close to my heart. Last week I served this version at my Sicilian dinner in Sydney! It is a bit of a mix between the version I grew up eating and influenced by this recipe ! It was a hit! You can leave out the chicken livers if you prefer, however it just adds a lovely richness.
In other news, I am SO thrilled to be headlining The World’s Longest Brunch at the Melbourne Food and Wine Festival in March 2025! Located in the Royal Botanic Gardens, we will be literally taking a walk in the park, eating food, drinking drinks and having a really good time! I hope to see you there!!
