Hi lovely readers!

I cannot quite believe it’s almost the end of January! To say it was busy would be an understatement! Three weeks of OSTRO at the Australian Open was absolutely epic and wonderful, plus I curated a menu for the Women’s semi finals AO inspirational series dinner. It was such a thrill.

We also moved house (gah) and decided to do it all ourselves (That Maltese and Japanese mindset combined)!! We have started to settle in nicely and loving cooking in my new sweet kitchen!

I’ve been rather delayed here, and did miss a newsletter, apologies, but making up for it here with four new recipes for you all, so perfect for back to work/back to school/just general life!

An incredible pan fried chicken with brothy beans and parsley pesto. This is honestly so good and comforting whilst being really quick to make. You could even use a store-bought pesto for an even faster meal. I love how the beans become even creamier once it mixes with the pesto! Delish!

Then I’m sharing with you a recipe for tuna crudo with tomato vinaigrette, one of the most simple and delicious ways to serve some raw tuna. It makes an excellent starter if you have friends coming over.

The third recipe is THE chicken salad from my OSTRO pop up at the Australian Open! It was SO popular and I just knew I wanted to share it with you so you can make it at home. This version has cracked wheat in it, but you can always swap it for chickpeas, which is what we did at the AO, to make it GF!

Fourth! An incredible end of summer salad of tomatoes, peaches and grilled corn with an absolutely heavenly tahini sauce! I served this as a Vegan entree as part of the menu I curated for the AO inspirational series last week ahead of the Women’s Semi Finals!
