I’m writing this newsletter from Tropical North Queensland where I’ve been on assignment working on a very exciting project this week! I can’t wait to share more about it soon but it’s been a real career milestone and something I have wanted to do for a long time! I will share all of the details very soon!

Today I’m sharing two recipes which I think are perfect for these busy days as we fully settle into the new work and school year. I also can’t believe it’s nearly March.
I still have a few more snack recipes I want to share but thought I would break it up with some delicious mid week dinner ideas! The first is a seriously good Fig and halloumi salad with an incredible dressing!
And the second recipe is for Japanese chicken thighs - roasted with a sweet, salty and sticky glaze! Served with rice and a cabbage and carrot salad. SO satisfying and so simple!
