Persimmon, mozzarella and prosciutto salad

It's barely a recipe, but the combination is one I just must share because every winter, I make this and I am reminded that it is JUST SO GOOD!! The sweetness of the persimmon with the parma ham and the milky creaminess of the mozzarella is the perfect match! Peaches are a great replacement for the persimmon in summer!
