A few weeks ago I mentioned the roasted Brussels sprouts salad I always order at Pina in Potts Point Sydney! It’s just so good and a completely satisfying lunch! I order it with a side of grilled chicken too! It has this seedy granola crunch on top which is salty and a little sweet. Since I don’t live in Sydney and cannot get my roasted Brussels sprouts salad on the regular, I decided to come up with my own version!
The seedy granola is SO delicious on the salad but it is also great to snack on throughout the day. The soy sauce and maple syrup give such a umami hit and is such a clever textural addition to the salad!
The grilled chicken is optional, and could be subbed out for grilled tofu too.
I’ve been making this salad at least once a week and I hope you love it too!
