My final recipe for 2024, and it’s one full of nostalgia and summer goodness!

Today’s recipe is Summer Pudding! It’s a little bit retro but I think it should 100% make a comeback as it’s so easy to make and tastes like the most incredible jam sandwich you’ll ever have! I serve mine with a mixture of double and pure cream and it is so comforting and perfect if you’re in the Southern Hemisphere, like I am! Barely any cooking required and all done the day before – truly what hot holiday cooking is all about!
I also made use of the crusts from the bread by turning them into sweet rusks. Some olive oil, cinnamon and sugar and baked in a 180C for 10-15 minutes until crunchy. Nori’s mum would do this with the shokupan crusts when he was growing up. Most Japanese families don’t have an oven though, so they are deep fried and rolled in cinnamon sugar like a donut. So good!!
Also, OSTRO will be at the Australian Open next year in January, so if you’re there be sure to head over to Garden Square Precinct where I’ll be serving up some delicious summer food for you while you watch the tennis!
